Time:1 hour 10 minutes

Instructions:Hob: 1 hour 10 minutes
No need to soak. Rinse thoroughly before cooking.
Place 100g of beans into a large saucepan with 500ml of water.
Place the pan on the medium hob ring over a high heat. Bring to the boil and
boil for 10 minutes.
Reduce the heat to low and simmer for 60 minutes, until the beans have softened
but are slightly firm to the bite.
Drain thoroughly, rinse and use as required.
All appliances vary, these are guidlines only. Check food is piping hot
throughout before serving.

Mexican Frijoles Dip

Preparation Time: 15 minutes
Cooking Time: 1 hours 30 minutes

150g Tesco Black Turtle Beans
300ml water
1 small hot red chilli pepper, de-seeded & finely chopped
3 garlic cloves, crushed
1 tbsp dried coriander leaf
½ tsp ground cumin
½ tsp chilli powder
1 tsp malt vinegar
salt & black pepper to taste

1. Cook 150g of Black Turtle Beans as per back of pack instructions, but using
800mls of water instead of 500mls.
2. Place the cooked beans into a medium saucepan with 300mls water. Add chopped
red chilli, crushed garlic, coriander, cumin, chilli powder and vinegar.
3. Bring to the boil and then simmer for 20 minutes, stirring occasionally so
that the beans do not stick to the pan. The beans should be very tender and
only just covered with water.
4. Remove from the heat, transfer to a blender or food processor and process to
a smooth consistency.
5. Lightly season to taste and serve warm or cold.

To Serve:
Serve warm topped with a little crumbled Feta cheese and a bowl of lightly
salted nachos.
